A SNACK FOR THE TOUGH COOKIES OUT THERE!

Bliss balls are out (for a brief moment) and cookies are in!

If you are coming to Hot Yoga this week, then you'll be going home with 'one tough cookie'! They are perfect fodder post exercise and full of good nutrition. They'll keep you going until you sit down for a real meal. If you want to try these yourself, then check out the recipe below. They are sooooo easy and healthy. I'm not sure the kids will like them, they are more of a grown up cookie fueling our adult needs and waistlines :)

ONE TOUGH COOKIE!

¾ cup of brazil nuts

1 ½ cups of raw almonds

30 grams of raw sunflower seeds (1/8 cup)

40 grams of raw pumpkin seeds (1/4 cup)

1 cup of dried prunes

½ cup of dried apricots

80 grams of desiccated coconut (I use Crazy Jack’s organic brand, available at supermarkets as there are no preservatives, just 100% organic coconut)

Finely grated zest of 1 lemon

2 tbsp of pureed apple (you can also use apple juice)

Preheat the oven to 150C/300F/gas mark 2

Place all of the ingredients in a food processor and whizz until the mixture comes together, adding extra apple juice if required.

Divide the mixture into 15 to 20 balls and flatten each ball (keep your hands wet so they don't stick to them when you flatten the balls) to a thickness of 5mm or the flattest you can get them.

Bake for 15 minutes, or until just firm, and then cool on a wire rack.

Notes: I don’t like using apple juice, so I soften 2 chopped apples in hot water on the stove and then puree them in the food processor. An alternative is to use orange zest and juice of a real orange in the recipe.

You can use any nuts, sometimes I use walnuts and cashews, instead of Brazil and almonds. Mix it up and try different combos.

Perfect for: Mid morning or afternoon tea/coffee break; late night munchies with a cup of tea; breakfast when you are in a rush; a burst of energy on the move; post exercise; snacks for in-between stuff.
